Yes, you could leave the door open on the Crop Protection Cage - Large, however, the door is the size of one of those side panels, so it would leave a rather large gap open, while allowing for bees to enter for pollination, it wouldn't be able to protect from other creatures trying to get to the Blue Berries.
For pollination, leaving it open during the day would be best, as that's when bees are active, but during the night, close it so nocturnal creatures like possums wouldn't be able to get in easily.

The Crop Protection Cage - Large has a fine mesh on it, depending on how determined and destructive your cat can be, it could claw it's way past the mesh.

Unfortunately no, the Crop Protection Cage - Large has a mesh size of 4mm, bees would need at least 12mm to fit through to access the plants on the inside.
